I bought a GME less than twelve months before the 80 channel units became available and asked if it could be upgraded but no it cannot.
Yes there is a lot less traffic on the new channels.
Yes it can be difficult to hear transmissions from 80 channel units at times. I have been told this is possible because the new units transmit on half the band width so if a 40 channel unit is not receiving from the full channel bandwidth the reception will be quiet. As said this can be largely overcome with good microphone use.

Consider it like sub-channels that only people on the same sub-channel can communicate on.

Eg. Let's say that the channel of choice is 12 with CTCSS on 2. People on ch 12 can listen to what is said on Ch 12 CTCSS 2, but people on Ch 12 CTCSS 2 can only hear from others on Ch 12 CTCSS 2. Ie, you won't be able to hear the general banter from others outside your group that are on Ch 12 while your group is on CTCSS 2.

          There are 38 available codes

Good idea Andrew, but rather than train everyone on ctss & hope they get it right & hope they can hear, we better just keep it simple.
It's not too bad once up there in the bush & good to hear other 4x4 groups nearby.

              That leads two two questions.
1 When a radio unlocks your squelch to receive you cannot hear other traffic on the channel at the same time unless transmitted on the same CTCSS code?
2 Will everybody not using CTCSS will be able to hear your transmissions?

If this is correct then instead of waiting for a clear channel users of CTCSS can just transmit on a busy channel and may or may not get through as intended.
Does not seem to be a smart way to run a radio network.
