Hmmm... did you get the Redarc user guide from their website. I think they specify a thicker guage wire between batteries if using the override switch ( 19 mm or 4 B &S )

I use a Traxide controller but the principle's the same. I have circuit breakers in the positive lead between the batteries and the controller, and mounted near the batteries. This is just in case there's ever a short in the inter battery wiring or the controller. I think Redarc specify this too.
I know you said you're running twin red/black between fridge and battery, but it's not shown on your drawing there.
It would probably be better to just run the black straight to the aux battery neg terminal rather than earthing it.
