Many years back a friend was setting up his rally car, the difference between the best and worse extractors was over 40 hp at the wheels on a 2 litre carb engine. So yes poor extractors/headers may reduce performance however good ones will improve performance.
How much difference depends in part on the design good or otherwise of the standard manifolds plus the condition & design of the rest of the exhaust sytem.
Back to beaujangles issue, a 50% increase in consumption indicates something else at fault, since the consumption increase coincided with the fitment of the extractors logically one would expect something has been damaged in fitting or adversely affected by the fitting.
You mentioned fitting new oxygen sensors, is the location the same as the originals?
