Offset on rims?? Rim selection?

I am looking at running a second set of tyres and rims for prado and am looking at some second hand options as well as sunraysia etc and am not sure about the offset they talk about. Any help would be great.
Also been sugested to run 16x8 rims as the 16x7 are rare and expensive, any thoughts for or against this

Rims

look at Show us your rig (3) My Prado has ROH track II 16 x 7 rims on it , they are a Toyota offset. I was told to use the Navara offset but I wanted the wheels out a bit more. They were on the car several years with no problems.Tyres were 265 x 75 x 16. The 16 x 7 Prado GXL rims are good if you can find them .. Ray
