We are planning doing a trip down along the Northern NSW coast and go probably as far as Coffs harbour. Anyone know of any good spots to check out? Beach driving and non touristy camp spots where you can light a fire and stoke up the camp oven ? Cheers :P

A few places come to mind...
Pottsville campground by the creek is a good place to start in the North. A short trip down the road to Yamba or Iluka. A few of my favourites include Wooli, Bundjalung NP and Yuraygir NP. Station Creek at Yuraygir is especially nice. Plenty of other locations
The Hema Map titled North East NSW is great for this area and try contacting the NSW National Parks and Ask for their free brochures for each region: Northern Rivers and Mid North Coast.
