We just came back from the Simpson crossing and I only had the one Spare... I know, its not ideal, but with 3 kids (5 ppl in total) I had no where to put a 2nd spare. I did think about a tyre only on the roofrack, but the rack was full with all the gear I couldn't put inside the car. I did take all the necessary tyre repair gear to get the tyre off/on the rim, etc, so we went that way and as it turn out we were lucky and didn't get a puncture (fitted new tyres b4 the trip)
The crossing of the Simpson is not that bad these days due to the traffic on it.... We just followed the QAA - K1 - French - Knolls - Rig Road tracks and found them ok considering....

Dual Rear Tyre carrier would be great if u had the $$

You could try storing it in the car inside the std spare wheel cover, and fill up the inside space with spares etc that you would have to pack anyway - that way it's not taking too much extra space. Also keeps the inevitable road grime, tyre shine etc that is on the tyres off the carpet.

Could you mount the spare vertically on your ARB front bar.
Since you have only tyre and no rim it will be easy to mount and lift.
