If you have kids can highly recommend Disneyland HK, a great day out. The Grizzly Gulch was a pretty cool / different style roller coaster that gave us all a good laugh. Ocean Park HK is also pretty cool, try the Chinese version of a dagwood dog, the noodle dog - very tasty!

Jeffers is right, great shopping and to take plenty of money. Head over to Shenzen on the mainland if you have the time, that is where the shopping is at. Enjoy.

If any of your group are blue eyed and blonde, be prepared for a lot of attention.

I'll second Shenzhen - it's full on but worth it.
Prado 120 petrol, TRD supercharger, front/rear airlockers, profender suspension, superior UCA's and trailing arms, 4.56 nitro gears, arb winchbar, winch, ipf spots, 285/70/17 Bfg muds km2's, UHF, awning, steel roofrack, buds sliders, rear drawers, extractors/exhaust, plus a heap of other crap.

You need to organise a visa for Shenzhen.
Use the subway, buy an octopus card and preload it with funds. They work in shops and vending machines too.
Best transport system I have ever used.
The free laser show on the Kowloon waterfront ( star walk) every night is good.
Visit the peak but try to do a non overcast day, as the buildings and view gets obscured.
On a clear day ( rare) you can see into the new territories.
Ocean park is worth a visit, Disneyland too.
Be aware of dodgy electronics in Shenzhen " crazy mall" it's the huge shopping centre as soon as you walk out of immigration. Cheap clothes etc.
ladies street, pet street, electronic street and market street are all good. Right near each other.
The flower market and bird park next to it and the streets above are worth a visit.
Pet shops also have all oddities. Chinchillas, hamsters etc. kids love them..

Anything in Kowloon is nearby. The transit system is amazing. And it's got huge underground walkways too. When its raining you can literally spend the whole day underground and on transit without coming out in the rain.
I've done about 18 trips to HK now
I usually stay in tsim tsa shu.
The zoo isn't worth the bother, concrete jungle basically.
It's very safe to walk around even after midnight.
The towns of Stanley on HK island is touristy, either a like or not..
                            The must do are:
Laser show, best from Kowloon ( tsim tsa shu) waterfront
                            The peak
                            Disneyland( kids)
Market streets ( any map will show them)
                            Night market
Shopping centres. ( heaps of them)
Jump the transit and just head to different stops and snoop around.

Food is good too, try some local places, you'll also find good western..

Wandering around Kowloon especially at night is always interesting. HK island in the business district during the day is eye opening.
Visit the longest escalator in the world. I think it's like a kilometre?
