I know there are a few sparky’s on PP so here’s a hypothetical question. If I was going to swap some bayonets to low voltage down lights and the bayonet has an active, neutral and earth and the low voltage transformer only has an active and neutral. What do you do with the earth?

Blue point it or fold it back over the main cable and tape it up. It's not required on modern plastic cased transformers. (unless the manufacturer has provided a terminal for it)

As Mick has said however you mention you coiled it around the flex, please make sure it is secured and taped up or terminated. You don't want an unterminated earth conductor floating around, whilst not dangerous, will cause nuisance tripping if it comes into contact with an active.

If, you were to pay myself to do it, i would have stuck the wire into a 413 Socket (or a 414 if needing two outlets near each other), i would have bought transformers with a lead and plug fitted, or at least bought a 2 core flex lead and plug seperate and fitted to the transformer. Then just a matter of plugging the transformer into the socket.
Yes you're right... brain fade on my part. ops: I only have a B class industrial licence and have been off the tools for years.
Fit a GPO for each light/transformer.
BTW.. for those DIYers... a friend of mine recently had an insurance claim regected, for a small electrical fire, in a relativily new workshop.... why? ... no COC (certificate of complience) Which is something to think about for those that do like to "tinker" at home.
