If you have declared all the extras on your insurance, you should be able to argue the case to increase the replacement value of your vehicle, but you may need the reciepts to support your claim. If you have not declared your extras then the insurance company may say you negelcted to inform them of the modifications to avoid paying a higher premium related to the true value of your vehicle and therefore, you are only insured to the value of the base vehicle.
It is a tricky one, because if you have modified the vehicle from stock without telling the insurance company then they may deem that you have broken the insurance agreement with them, so they could say your vehicle is no longer insured and all you get is your premium back.
They are definately not going to pay out more than base vehicle value if you have only been paying a base vehicle premium. Sadly you get the cover you pay for.
Good luck
